Three of Lake Como\u2019s most famous delicacies are fish dishes displaying the <strong>local culinary tradition<\/strong> at its best: rice \u201din cagnone\u201d with perch fillets, polenta with \u201cmissoltini\u201d, and fish \u201cin carpione\u201d or vinegar marinade. In summer, these delicious dishes can often be found on the menus of local restaurants.\u00a0<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Rice \u201cin cagnone\u201d with perch fillets<\/strong><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">This dish embodies the <strong>authenticity <\/strong>of the local culinary tradition. The <strong>creaminess <\/strong>of rice, boiled and then mixed with butter, sage, and Parmesan cheese, goes perfectly with <strong>breaded and fried perch fillets<\/strong>. These days, some local restaurants offer a more modern and less simple version, in which the perch is served with \u201crisotto\u201d instead of rice \u201cin cagnone\u201d. In the days when refrigerators didn\u2019t exist, this preparation method was used to <strong>preserve fish<\/strong> in vinegar for several days. The \u201ccarpione\u201d gives the dish freshness and a touch of acidity. This recipe can be prepared with other lake fish, such as <strong>bleak or whitefish<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>\u201cPolenta\u201d with \u201cmissoltini\u201d<\/strong><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Missoltini are made by <strong>salting and drying \u201cagoni\u201d<\/strong>, small fish typical of Lake Como.
